Apple Juice

Apple juice is the liquid result of pressing or macerating apples. It is often pasteurized (heat-treated) to remove potentially harmful bacteria and maintain shelf life prior to packaging. Unlike apple cider, apple juice also goes through a clarification process and is strained to remove pectin, or naturally occurring byproduct, leaving a clear liquid.

Raw apple juice is the unpasteurized, unfiltered product made from apples. Since filtering removes the pectin that is formed from the apple, raw apple juice contains higher levels of quercetin, a natural polyphenol that helps fight degenerative diseases.  

Unsweetened apple juice has many health benefits due to its high concentration of vitamins (10 different kinds!), phytonutrients, minerals and antioxidants. However, due to its high sugar content and glycemic load, apple juice should be consumed only in limited quantities.
