Sweeteners, Agave Nectar

Agave nectar is an all-natural, low calorie, low glycemic sweetener.

It is derived from the blue agave plant which is also used to make tequilla. This golden syrup is composed of fructose (92%) and glucose (85%) sugars. While fructose is low glycemic and will not cause a sharp spike in blood sugar, it increases triglycerides significantly. For this reason, we do not use agave nectar in our recipes.
