Milk, Goat

While goat's milk is more popular in many parts of the world, only recently has goat's milk become readily available in the United States.

While goat's milk is similar to cow's milk, goat's milk has some distinct advantages. Because goat's milk does not contain agglutinin, the fat globules in goat's milk don't cluster together which makes them easier to digest.

Goat's milk may also have advantages when it comes to allergies. Goat's milk contains only trace amounts of an allergenic casein protein, alpha-S1, found in cow's milk. And goat's milk casein is more similar to human milk.

Be sure to buy goat's milk that is free of antiobiotics and bovine growth hormone (BGH)
