Spices, Celery Seed

Celery seed is the dried fruit of Apium graviolens, a biennial in the Umbelliferae, or parsley family.

While it is the same genus and species used as table celery, there are particular varieties that are used for the vegetable and the spice. The oval seeds are very small (about 1/16th of an inch) and light brown.

Celery seed is grown in France and India and tastes similar to table celery, with its warm, slightly bitter, aromatic flavor.
