Champagne vinegar is a result of adding yeast to champagne and allowing it to ferment. The smooth vanilla flavor is a result of the barrels in which it ages.  

Champagne vinegar is popular in dressings and in tomato based sauces. As with other vinegars, champagne vinegar helps lower the glycemic index of foods, which reduces a spike in blood sugar after a meal. It is also said to help lower LDL (bad) cholesterol when consumed regularly. 

Because champagne vinegar is derived from grapes – a crop on the Dirty Dozen list of those most contaminated with pesticides – be sure to choose organic champagne vinegar.
